Article Terroir

Mainly clayeysiliceous and sandy-siliceous, with a lot of stone flint in the surface.

Winemaking

The 3 types of grapes are separately vinified.

Immediately pressed after harvesting, the grapes give a grey wine, called “Partridge eye pink”.

Alcoholic fermentation is done under a temperature between 18 and 20° in inox tank with stainless steel coil. It last 1 or 2 months without yeasting, then it matures on fine lees for 4 months with lees stirring so that the wine gets round and develop more aroma.

 

Tasting

This is a very aromatic, rich wine with a beautiful freshness, which can be tasted either as an aperitif or with starters. It can be matched with fish in sauce, white meat, couscous, exotic dishes and grill too.

Drink in the 2-5 years to preserve all its flavors.
